This is what I made for dessert tonight. It's SO good, custard like, forms it's own crust on the bottom and top....just YUMMY!!!
BLENDER PIE
4 eggs
1/2 cup flour
6 Tbsp. soft margarine
1 c. flaked coconut (you can leave it out if you wish)
1 tsp. vanilla
2 c. milk
3/4 cup sugar
Combine all ingredients in blender; blend on high speed until thoroughly mixed. Pour into buttered and floured 10-inch pie pan or oblong dish.
Bake at 350º for 35 to 40 minutes. Test with a knife as for custard. Makes 1 (10-inch) pie.
Wow!! This looks amazingly good and sounds so simple to make! I am definitely going to have to try this!

Yummy, this looks good! Growing up, I loved egg custard pie, but have never learned how to make it. This looks so much easier, and I almost always have these ingredients on hand (minus the coconut, we don't eat that stuff!). So, if you leave the coconut out, you don't substitute anything else? :)
