Blender Pie!!!

I have this recipe for a Blender Pie that I have made a couple times, it's one of those "I'm in the mood for dessert but have nothing to make an elaborate one".........so you run to the pantry and grab a couple things, literally dump it all in the blender, mix it up and pour it into a pie dish, bake it and VOILA. That's it!!!

This is what I made for dessert tonight. It's SO good, custard like, forms it's own crust on the bottom and top....just YUMMY!!!

Blender Pie

BLENDER PIE

4 eggs
1/2 cup flour
6 Tbsp. soft margarine
1 c. flaked coconut (you can leave it out if you wish)
1 tsp. vanilla
2 c. milk
3/4 cup sugar

Combine all ingredients in blender; blend on high speed until thoroughly mixed. Pour into buttered and floured 10-inch pie pan or oblong dish.


Bake at 350º for 35 to 40 minutes. Test with a knife as for custard. Makes 1 (10-inch) pie.

LUNCH: Hotdog, Fruit bowl
DINNER: Salisbury Steak w/ noodles


WEDNESDAY 29th

BREAKFAST: Toast with Jam, Orange Juice
LUNCH: Burritos, Fruit
DINNER: Cheeseburger Pie w/ Salad


THURSDAY 30th

BREAKFAST: Muffins, Apple Juice
LUNCH: Soup, Yogurt
DINNER: Slow Cooker Pork Roast w/ potatoes and carrots


FRIDAY 31st

BREAKFAST: Cinnamon Toast, Milk
LUNCH: *Sonic*
DINNER: Breaded Catfish Nuggets, Tomato Rice, Okra


SATURDAY 1st

BREAKFAST: Cheesy Eggs on Toast
LUNCH: Pizza
DINNER: Country Fried Steaks with Mashed Potatoes and carrots


SUNDAY 2nd

BREAKFAST: Strawberry Stuffed French Toast
LUNCH: Honey Mustard Chicken Salad
DINNER: Chicken and Sausage Ragu w/ Pasta

Menu Plan Monday!!!

DINNER: Feijoada


TUESDAY 21st

BREAKFAST: Sausage, egg and cheese pancake sandwiches
LUNCH: Mini Pizzas
DINNER: Breaded Fish Fillets with Fried Green Beans




WEDNESDAY 22nd

BREAKFAST: Chocolate Chip Muffin, Milk
LUNCH: Grilled Cheese Sandwich, Celery Sticks
DINNER: Shrimp & Mushroom Linguine



THURSDAY 23rd

BREAKFAST: Oatmeal, Milk, Fruit
LUNCH: Tuna Salad
DINNER: Monterey Chicken


FRIDAY 24th

BREAKFAST: Cinnamon Toast, Apple Juice
LUNCH: Wholewheat Chicken Wrap
DINNER: Crab Rangoon with Fried Rice


SATURDAY 25th

BREAKFAST: Pumpkin Pancakes
LUNCH: Asian Beef Wraps
DINNER: Smoked Sausage with Onion and Tomato sauce


SUNDAY 26th

BREAKFAST: Bacon, Eggs, Sausage, Biscuits and Gravy
LUNCH: Late breakfast so won't need to cook lunch
DINNER: Salisbury Steak w/ Mashed Potatoes

Crockpot Enchilada Casserole

I love Mexican food and I love my crockpot, so anytime that I can combine the two it just makes me super happy.

I've made Enchilada Casserole before but not in the crockpot, so I'm eager to see how this one turns out. It smells really good right now and if that's an indication of how it will taste, I think we'll have a winner on our hands.

I plan to make a big salad to go with it. Enjoy!



CROCKPOT ENCHILADA CASSEROLE


1 (14 1/2 ounce) can tomatoes
1 small onion, chopped fine
1 clove garlic, minced fine
1/2 teaspoon ground red pepper
1/2 teaspoon salt
1 (6 ounce) can tomato paste
1 lb ground beef, browned
1 package taco seasoning mix
2 cups shredded cheddar cheese
9 corn tortillas


1. Blend tomatoes with onion and garlic in blender.

2. Pour in medium saucepan.

3. Add pepper, salt and tomato paste.

4. Heat until boiling, then simmer 5 to10 minutes.

5. Place 3 tortillas in bottom of crock pot.

6. Layer on tortillas 1/3 of ground beef, 1/3 tomato sauce and 1/3 Cheddar cheese, then 3 more tortillas.

7. Repeat each layer 2 more times, ending with cheese.

8. Cover and cook on low 5 to 6 hours.

9. (I usually go 5 hours to keep beef from overcooking).
