So I was standing in front of the stove and trying to figure out what to make with the chicken, I usually have a menu but for some reason I somehow skipped this day. I don't know why, I tend to do crazy stuff like that all the time, like the one time where I made the menus for two weeks or so I thought but ended up 3 days short LOL
Anyway, this was a spur of the moment, throw a bunch of things together kinda thing but my husband and children were over the moon with how good it was, I have never heard that many ooh's and aah's.
So good!
Sweet and Spicy Bacon Chicken
4 chicken breasts cut in thirds (12 pieces)
Bacon slices
salt and pepper to taste
garlic powder
chili powder
brown sugar
Cut each breast into 3 pieces, season all the chicken with the spices,
then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish....make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine.
Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy.
I served mine with mashed potatoes and spooned some of the gravy from the chicken on top. Oh Lord, I am salivating just remembering.

ReplyDeleteJust up from the dinner table and this dish got a resounding thumbs up from the family - despite me not measuring how much chilli powder went into the mix. (I might use a smidge less next time) I cut my fillets only in half, but had the thought of cutting into even smaller sections and serving this up as bite size entree's.

ReplyDeleteI took the long route though. I had to cut my breast meat from the bone. Then I didn't have olive oil so I used a little vegetable oil with about 2tblsp of butter for flavor. And then I didn't have garlic powder so I cut some fresh up and sprinkled it around the pan before I placed the meat in. One key factor for me is the bacon. It has to be "Hickory Smoked". Sugar cured or any blend of curing just don't cut it.
This really was fantastic!

Seasoned them a bit different, but wrapped in bacon with brown sugar and it was a delight!! Thanks for the recipe. Totally enjoyed it - you can't go wrong with this recipe.

ReplyDeleteThank you for this recipe. I made it tonight and it was fabulous! The sauce was to die for! Only problem was the cleanup, the sauce burned and stuck to the pan a bit around the edges, so next time I will line with foil.
