Italian Sausage, Peppers and Potatoes

I love this dish, it's very quick and easy for a midweek dinner.

I've had this recipe for a years and honestly don't remember where I got it from, but it's my go to when I'm in a hurry and just want to throw something filling on the table

Italian Sausage, Peppers and Potatoes


Ingredients:
1 pound/1 package Italian sausage, mild or spicy.
1 medium onion, cut into 1-inch chunks.
2 green peppers, cut into 1-inch chunks or slices.
6 medium red potatoes, cut into 3/4-inch chunks.
3/4 cup water.
1/2 teaspoon salt, optional.
1/8 teaspoon pepper, optional.
Grated parmesan or shredded mozzarella cheese, optional.


Directions:

In a deep skillet that has a lid, cook sausage until it turns a brown color on all sides.
Remove from pan and cut into 1-inch chunks.

Return to pan, brown on all sides and cook until almost cooked through. Drain grease.
Add remaining ingredients, cover and cook over medium low heat for 20-30 minutes. Stir occasionally and cook until potatoes are fork tender.

Add shredded or grated cheese just before serving, if desired.

That looks incredibly delicious SAndra! I have not been able to find a good Italian Sausage here yet, although I know they do exist!

I make Italian sausage with peppers and onions but I never thought to add potatoes to it. Yum--will definitely be trying this one soon too. Thanks--you are really adding variety to our meals.
