Homemade Low Cal Ice Cream Sandwiches

I'm sure many of you out there already know about these and probably make them for your family too.  But for those who have never tried them, you're in for a treat.

They taste delicious and they're a healthier alternative to store bought ice cream sandwiches.  I make the plain vanilla ones but I've also been known to throw some chopped nuts into the cool whip.  Yum.

Homemade Low Calorie Ice Cream Sandwiches


Low Fat Honey Graham Crackers
Fat Free Cool Whip


Thaw the cool whip in the counter until it gets soft.  You don't want it watery, just soft enough to be able to scoop onto the sandwiches.

Break the graham cracker in half, then spoon on 1-2 tablespoons of cool whip.  Place the other half on top and gently squeeze down to distribute the filling.

Place on a cookie sheet lined with wax or parchment paper.  Pop in the freezer until frozen solid, then remove and wrap each individually in Cling Wrap.  Freezing them first before wrapping will ensure that they keep their shape.

The longer they're in the freezer, the better because it allows the cracker to soften just like ice cream sandwiches do.  Enjoy :)

Alternatively, if you want bigger sandwiches, don't break the graham crackers in half, simply make them bigger :)


Notes:  You can totally change these up by using different cool whip flavors like chocolate or strawberry and also changing the graham crackers you use, like cinnamon or chocolate.  Of course they won't be as low calorie but if you're not looking to count calories, then just go to town and enjoy yourself :)
