Lunch Lady Brownies

Drop everything you're doing, and go and make these for your family, or for you, whatever floats your boat.

I'm not even going to sit here and make a huge introduction or talk over and over about what a brownie is or why you should make these, I just want you to know that these are delicious and you will never think of brownies the same way again.

Lunch Lady Brownies
Yield: 12 to 24


1 cup butter, melted
½ cup unsweetened cocoa powder
2 cups all-purpose flour
2 cups granulated sugar
4 large eggs
4 teaspoons vanilla extract

Chocolate Frosting

¼ cup butter, softened
¼ cup milk ( I use 2%)
¼ cup unsweetened cocoa powder
3 cups powdered sugar


Preheat oven to 350° F. Line a 9x13-inch baking dish with foil and spray foil with non-stick spray. Set aside.
In the bowl of an electric stand-mixer, add the melted butter and cocoa powder. Using the paddle attachment, blend until smooth.

Add the flour and sugar. Beat together then add eggs and vanilla. Mix just until combined. Don't over mix. (Batter will be thick)

Pour batter into prepared baking dish and spread out evenly. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Remove brownies from oven and let stand 15 minutes before frosting. You want the brownies still warm when you frost them!

FOR CHOCOLATE FROSTING: Beat together all the frosting ingredients until smooth. Pour and spread over warm brownies. Let cool completely before cutting and serving.

Speedy Brownies

I think everyone has a favorite brownie recipe in their stash.  Either it's been passed down from generation to generation, or from a favorite cookbook.

I've never really had one that I made consistently.  I have tried so many over the years, some infused with nuts and different flavors, some fudgey, some more cake like and I have certainly had my fair share of disasters when it comes to brownies too.

The recipe I'm sharing today, I can say that it really is the first one that I have kept on hand because of it's simplicity.  Dumping all the ingredients into one bowl and a sprinkle of chocolate chips is what I call easy....but don't be fooled into thinking they are less than stellar because these Speedy Brownies truly are delicious.

2 cups sugar
1-3/4 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon salt
5 eggs
1 cup canola oil
1 teaspoon vanilla extract
1 cup (6 ounces) semisweet chocolate chips


In a large bowl, beat the first seven ingredients. Pour into a greased 13-in. x 9-in. baking pan. Sprinkle with chocolate chips.

Bake at 350° for 30 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack.

Fudge Brownies

So after my wonderful husband got me the KitchenAid Mixer, I wanted to start cooking and baking right away, so the first thing I made were these delicious brownies, they're SO good and were gone within two hours LOL

1 cup butter or margarine, softened
4 squares (1oz each) unsweetened chocolate
2 cups sugar
1 teaspoon vanilla
3 eggs
1 cup all-purpose flour
½ teaspoon salt
1 cup chopped nuts

Melt ½ cup butter with chocolate over low heat; cool. Place remaining butter, sugar, and vanilla in bowl. Attach bowl and flat beater.

Fudge Brownies

Turn to Speed 2 and mix for 30 seconds, then increase to Speed 6 and cream for 2 minutes. Reduce to Speed 4 and add eggs, one at a time beating 15 seconds after each addition. Stop and scrape bowl.

Add cooled butter and chocolate. Turn to Speed 2 and mix for 30 seconds. Reduce to Stir Speed and add flour, salt, and nuts; mix until well blended, about 30 seconds.

Pour into greased and floured 13x9x2 inch pan. Bake at 350 degrees F for 45 minutes. Cool in pan and cut into 2-inch squares. (we like big brownies, so I cut mine into big squares)

Yield: 2 dozen brownies

12 Days of Baking!!! *DAY 1*

Starting today, I'm going to post a baking recipe everyday, for the next 12 days until Christmas. How does that sound??? I know that during the holidays a lot of us bake cookies, and cookie bars, fudge and pies and all that yummy goodness, so I thought it would be a neat idea to have the 12 Days of Baking.


If you like Brownies as much as I do, then this recipe is definitely a MUST TRY, they are so good!



BROWNIE BOMBS

Ingredients

  • 4 ounces unsweetened chocolate
  • 1/2 cup butter or margarine
  • 1-2/3 cups sugar
  • 1/2 teaspoon vanilla
  • 3 eggs
  • 3/4 cup all-purpose flour
  • 1 8-ounce package cream cheese, softened
  • 4 teaspoons all-purpose flour
  • 1 egg
  • 1/4 teaspoon vanilla
  • 1/2 cup semisweet chocolate pieces

Directions

1. In a saucepan, melt the unsweetened chocolate and butter over low heat. Remove the mixture from the heat.Stir in 1-1/3 cups of the sugar and the 1/2 teaspoon vanilla. Cool the mixture for 15 minutes. Beat in the 3 eggs and the 3/4 cup flour.

2. In a mixing bowl, mix the remaining 1/3 cup sugar, the cream cheese, the 1 egg, the 4 teaspoons flour, and the 1/4 teaspoon vanilla.

3. Coat an 8x8x2-inch baking pan with nonstick cooking spray. Spread 2/3 of the chocolate batter in the pan. Spoon cream cheese layer over batter. Dollop with remaining chocolate batter.

4. Bake in a 350 degree F oven for 20 minutes. Sprinkle with chocolate pieces. Bake for 12 minutes more. Cool. Cover; store in the refrigerator. Let the chilled dessert stand at room temperature for 30 minutes to serve. Makes 16 servings.
