Belgian Waffles

We all have waffle recipes, some we love more than others, some are plain and simple, others are more elaborate like Waffles with Vanilla Custard, or  Banana Nut Buttermilk Waffles.

But there are times when one wishes to try a good ol' Belgian Waffle.

This recipe is super simple to make, they taste pretty good and they also create a nice crispy edge, which personally I love.


Belgian Waffles


2 cups flour
4 teaspoons baking powder
1⁄2 teaspoon salt
1⁄4 cup sugar
2 eggs, separated
1⁄2 cup oil
2 cups milk


Sift the dry ingredients together in a large bowl.  Separate the eggs.

In small bowl, beat egg whites until stiff.

Mix together the egg yolks, milk and oil and stir slightly.  Add to dry ingredients and mix well.
Fold in beaten egg whites.

Use 1/4 cups mix per waffle in your hot waffle iron.

Banana Nut Buttermilk Waffles

Week day breakfasts are super simple around here, either toast, cereal or oatmeal, but weekends I try to make something special.

This morning I whipped up a batch of Banana Nut Buttermilk Waffles from my Kitchenaid Best-Loved Recipes cookbook. They are SO good!

Banana Nut Buttermilk Waffles

3/4 cup walnuts or pecans
2 cups flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon salt
2 eggs, separated
2 cups buttermilk
2 very ripe bananas, mashed (about 1 cup)
4 tablespoons butter, melted
1 teaspoon vanilla


Toast walnuts in medium nonstick skillet over medium heat 5 to 8 minutes until fragrant, stirring frequently. Transfer to plate to cool; chop and set aside.

Lightly spray waffle iron with nonstick cooking spray; preheat according to manufacturer's directions.

Meanwhile, combine flour, sugar, baking powder and salt in large bowl. Beat egg yolks in medium bowl. Add buttermilk, mashed bananas, butter, vanilla and wanuts; mix well.

Stir buttermilk mixture into flour mixture just until moistened.

Beat egg whites in bowl of electric stand mixer on high until stiff but not dry. Fold egg whites into batter.

Pour 3/4 cup batter into waffle iron; bake 4 to 5 minutes or until golden.

Serve with syrup and banana slices. Garnish with additional walnuts.

Waffles with Vanilla Custard!

Another great recipe from Mennonite Girls Can Cook. The vanilla custard reminds me of the one I used to eat back home in South Africa, LOVE IT.




WAFFLES (makes about 4 - 5 round waffles)
 
 
1 1/4 cups flour 
1/2 tsp salt 
2 tsp baking powder 
1/2 tsp baking soda 
1 egg and 2 egg whites - save yolks for sauce 
1 1/2 cups buttermilk 
6 Tbsp oil 
 
 
Preheat waffle iron. Mix dry ingredients in a medium bowl. Add buttermilk, oil and eggs; mix until smooth (with hand held mixer). Spread onto hot waffle iron. (leave room around edge for batter to spread) You may want to spray or wipe the Teflon with an oily paper towel, just before cooking the first waffle. It should be fine then until the next time you use it. 
 
 
VANILLA SAUCE
 
2 cups milk, divided 
2 (rounded) Tbsp flour 
2 Tbsp. sugar 
1/8 tsp. vanilla powder or 1 tsp. vanilla extract 
2 egg yolks In a small pot, heat 
1 cup milk until it begins to boil. (med heat) 
 
 
While you are doing this: mix dry ingredients, add just a little of the 2nd cup of milk, blend the egg yolks in well, and then the rest of the milk. Just before the milk in the pot begins to boil up, stir in the sauce and stir with whisk until the sauce begins to cook and thicken. Done!
