A while ago I posted a Taco Pasta recipe on the blog, it was one that my family really enjoyed.
After that one, I've since then come across a few taco pasta dishes on the internet, a lot of different versions and different names....the main inspiration came from One Ordinary Day, though I adapted it to our taste.
1 lb ground beef
1 can petite diced tomatoes, undrained
1 packet taco seasoning
half a pack of cream cheese (4 oz.)
shredded mozzarella cheese
provolone cheese slices
8 oz. of your favorite pasta noodles
Cook the pasta according to directions.
Meanwhile, brown the ground beef, then add in the taco seasoning and the petite diced tomatoes, juice and all. Stir well and simmer for a minute or two. Add the cream cheese to the meat mixture, I like to cut it into chunks to make it easier to melt....cook for a few minutes stirring constantly until the cream cheese is melted.
When the pasta is cooked, add the pasta to the meat mixture and also about 1 cup of the water where the pasta was cooked in. Mix well.
Add in some shredded mozzarella cheese, just eyeball it, I think I added about 1/2 cup or so, then stir well to combine and for the cheese to melt.
Turn the oven on to 450 degrees. Top the pasta with sliced provolone cheese and then pop into the oven for about 5 minutes just until the cheese melts.
