Breakfast Delights........

or as I like to call them "run for the hills yummies". This is such a rich treat for breakfast but OH SO DOG GONE GOOD. The kids always ask for seconds and thirds. Well I do too, but since I'm the mommy I can just eat them without having to ask LOL

So here we go, seriously, I'm warning you, do NOT attempt these while on a diet *snicker*

BREAKFAST DELIGHTS

2 8-oz. pkgs. cream cheese, softened
2 c. sugar, divided
1 egg yolk
1 t. vanilla extract
24-oz. loaf sliced bread, crusts trimmed
cinnamon to taste
1 c. butter, melted


Mix together cream cheese, 1/2 cup sugar, egg yolk and vanilla. Spread one tablespoon mixture on each slice of bread. Roll slice from one corner to the other.

Mix cinnamon and remaining sugar together in a shallow bowl. Dip rolled bread in melted butter, then roll in cinnamon-sugar mixture. Place rolls on ungreased baking sheets.

Freeze rolls for at least 20 minutes. Bake at 350º for 8 to 10 minutes until hot and bubbly. Makes about 2 dozen.


Deep breath now cause we're about to immerse ourselves in butter and cream cheese......



Trim the crusts off the bread.......this part reminds me of my dad, he always wanted his crusts cut off

In a bowl mix the cream cheese, egg yolk and sugar

Add the vanilla extract and then mix everything well. I just use an electric mixer to make sure I get it all nice and smooth.
In a separate bowl combine the remaining 1 1/2 cups of sugar and cinnamon, stir together

Now we start making the yummies.....spread 1 tablespoon of the filling on each slice of bread


Roll bread from one corner to the other, see they look like pretty little crescent rolls

Now here comes the BAD but oh so GOOD part. Dip them in the melted butter
Roll them in the cinnamon sugar

Breakfast Delights

Place them on ungreased cookie sheets and then pop them into the freezer for about 20 minutes.

Bake them at 350º for 8-10 minutes.

Chicken in Cream Sauce!


This is one of our favorite chicken dishes, hubby and the kids ooohhh and ahhhhh over it, so here's what we had for dinner.



Chicken in Cream Sauce

4 chicken breasts, skinless
1/3 cup flour
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup butter or margarine
8 ounces mushrooms, sliced
1/3 cup white wine or chicken broth
1/4 cup chopped fresh parsley or 2 tablespoons dried parsley
3/4 cup whipping cream

Serves 4




In a bowl mix flour, salt and pepper


Coat chicken well, shake off excess


In a large skillet melt the butter, add the chicken and cook until brown on both sides and fully cooked through.


If you're using thin breasts they should take about 3 to 4 minutes on each side.....I'm using pretty thick ones so I let them cook for about 10 to 15 minutes.


Remove the chicken and set aside, add the mushrooms and wine or chicken stock to the skillet, cook for about 2 minutes


Add parsley and the whipping cream, cook over low heat stirring continually until sauce thickens, about 2 minutes.


Serve sauce over chicken.




YUM, I tell you it may sound simple but it's SO good, the chicken remains juicy and tender and it's just amazing with some garlic mashed potatoes.

WHO Bread!

The name makes me giggle and the kids also call it the "WHOOOOO bread" just like Amanda said her kids did. I got this recipe from "Soulemama" Amanda's blog, which is one of my favorite favorite blogs.



WHO Bread
(bread machine recipe here)

1 1/4 cup water
2 tablespoons honey
2 tablespoons butter @ room temperature
1 tsp salt
3 cups of flour (we do 2 cups unbleached white, 1 cup whole wheat pastry)
1/2 cup rolled oats
1 tablespoons brown sugar
1 tsp cinnamon
2 1/4 tsp active dry yeast (or, one package)

Pour 1 1/4c. warm water (about 110 degrees F), honey, sugar, and yeast into a bowl. Whisk until well combined and mixture is frothy. Set aside to proof while you mix together the other ingredients. In a separate large bowl stir together, flour, butter, salt, rolled oats, and cinnamon. Pour yeast mixture into flour mixture, and mix until thoroughly combined. (I like to do this with my hands.) Place dough into a lightly oiled bread pan. Cover with a damp towel and leave in a warm spot to rise for about an hour (45 min. if you'€™re impatient!). Punch down dough and let rise a second time for 45 minutes, covered with a damp towel. Preheat oven to 350 degrees F. Remove towel from top of dough and place pan in the center of your oven. Bake for 20-25 minutes. Done!



So here are all the ingredients.....

Start by putting the water, honey, yeast and brown sugar into a bowl


Mix well until frothy and then set aside to proof.


In a separate bowl add the butter, all purpose flour

The cinnamon........mmmmmm

Mix it all together well

Pour the yeast mixture into the flour mixture


Now mix it up really good, using your hands......gotta be the hands believe me

Ohhh it looks good already


Place it in a lightly oiled loaf pan and then cover it with a damp kitchen towel and let it sit in a warm spot for about an hour


Lift off the towel and punch down the dough and then let it sit another 45 minutes to an hour


Bake in a 350º for 20-25 minutes. That's it.......it's easy and it's so good.


Warm out of the oven, you see the butter melting on it?

My favorite way to eat it is slathered in butter and then drizzled with honey....Goodness it's so yummy.

Quick and Easy Tuna Pasta Salad!

One of mine and the kids favorite lunches is Tuna Salad, whether it's made with potatoes or pasta, either way is just great.

I've shared my recipe before using potatoes so this is how I do the one with pasta.

Whenever I have little bits of dry pasta leftover, I combine them all in one box and use that for the salad......this time I had a combination of shells and elbow macaroni.

In a pot of water, cook the pasta until tender, drain and set aside to cool down.

Add mayonnaise to taste, salt and pepper, a small onion finely diced, parsley, garlic powder and a little dash of nutmeg. Mix well.



To this we're going to add a can of tuna or two, depending on how much pasta you have.


Mix well.....

Finely, add some sliced hard boiled eggs. That's it.

It's quick, it's easy and my kids LOVE it, in fact everytime I make it they have 2 or 3 servings which is amazing for them.

Moist and Tender Wings!


MOIST AND TENDER WINGS


These are super easy and they cook in the slow cooker all day long, leaving this amazing aromal all over the house.

Here's how I make mine:

Here are the ingredients. A big package of Chicken Wings (about 5 lbs), Molasses, lemon juice, worcestershire sauce, garlic, tabasco, garlic powder, salt, salsa and chili powder.

You need 1/4 cup of lemon juice. It feels SO good to have my own lemon tree, no more using bottled lemon juice for me, though you could use it here too if that's all you have.

In a bowl mix together, 1/4 lemon juice, 1/4 cup molasses, 2 tablespoons worcestershire sauce, 3 teaspoons crushed garlic, 1 tablespoon chili powder, 1 tablespoon salsa, 1 teaspoon garlic powder, 1 teaspoon salt, 3 drops tabasco.

Mix well.

Cut the wings into three sections; discard the wing tips. Place it in the slow cooker.

Pour the remaining ingredients over the chicken.

Stir to coat and cook on LOW for 8 hours.
