Lemon Bread Pudding!

YUM!

I love anything lemon and I love bread pudding so this is the perfect combination...just goeey mushy lemony bread.


LEMON BREAD PUDDING

6 eggs
1/2 cup sugar
1/2 teaspoon vanilla
1/2 cup bisquick
2 cups milk
10 slices french bread, cut into cubes
1 can (15 oz) lemon pie filling
1 cup frozen whipped topping


In a bowl mix the eggs, sugar and vanilla extract.


Add the bisquick and the milk and mix well with a wire whisk


Cut the french bread slices into cubes


Throw the bread cubes into the egg mixture and stir it well to coat.


Layer half of the bread mixture in the bottom of a greased casserole dish.


Spread about 1 cup of the pie filling, randomly over the bread mixture


Yum!

Layer the remaining bread mixture over the pie filling. See how easy this is? There's nothing to it.


Bake in a 350 degree oven for 45 to 50 minutes or until golden brown. It smells SO good while it's baking.


In the meantime take the remaining pie filling and the cup of whipped topping and mix both well.


Then you dish up some warm bread pudding into a bowl and scoop a big ol' spoon of the whipped lemon topping. Enjoy!

  4. Linds - You find bisquick near the flours in the grocery store. It's usually a yellow box, it's a pancake and biscuit mix.
