Italian Sausage Lasagna!

This is another great lasagna version, there's so many out there and I have quite a few myself, this one is from the Gooseberry Patch Cookbooks.



Italian Sausage Lasagna

1 lb. mild Italian ground pork sausage, browned and drained
16-oz. can diced tomatoes
2 6-oz. cans tomato paste
1 clove garlic, minced
1 T. dried basil
1 T. dried parsley
3-1/2 t. salt. divided
3 c. cottage cheese
2 eggs, beaten
1/2 c. grated Parmesan cheese
1/2 t. pepper
10-oz. pkg. lasagna, cooked
16-oz. pkg. shredded mozzarella cheese

In a skillet over medium heat, combine sausage, tomatoes, tomato paste, garlic, herbs and 1-1/2 teaspoons salt. Simmer for 45 minutes, stirring occasionally. Combine cottage cheese, eggs, Parmesan cheese, remaining salt and pepper; set aside.

Arrange half of lasagna strips in a lightly greased 13"x9" baking pan, followed by half of the meat mixture, cottage cheese mixture and mozzarella. Repeat layers, ending with mozzarella.

Bake uncovered, at 375 degrees for 30 minutes. Remove from oven; let stand 15 minutes.

That looks great...OKAY...on Saturday I made one of your recipes...the chicken cut up with the mushroom gravy....it WAS so GOOD!!! YUM!

YUM! Hate to say it but cottage cheese, even the thought of it, makes me gag. Could I sub ricotta?
