Crockpot Beef Curry!

So easy, I usually make it on the stove but actually tried it in the crockpot this weekend and WOW was it good.


CROCKPOT BEEF CURRY
 
1 lb stewing beef 
1 onion, chopped finely 
olive oil 
salt and pepper 
1 bay leaf 
paprika 
1 or 2 tablespoons of curry powder (depending on how hot you want it) 
1 small can of tomato sauce 
1 cup of water 
1 can of coconut milk 
cooked rice 
coconut 
 
 
In a crockpot add a bit of olive oil, beef, onion, salt and pepper, curry powder, bay leaf, a dash of paprika, tomato sauce and 1 cup of water. Cook on high for 2 hours. 
 
15 minutes before it's done, add the coconut milk, when the time is up check the gravy, if it's too runny, whisk in 2 tablespoons of cornstarch and stir until thickened. 
 
Serve over cooked white rice and sprinkle on coconut. TRUST ME, don't be weirded out by the coconut on top, it makes the curry and it helps cut some of the heat from the curry powder. Enjoy!

  1. Lately all I could share is how to heat up frozen pizza or something in the microwave! I did get all the fixings for another pot of chili and some chicken tortilla soup, so hopefully I'll have some home cooked meals this week again.

    This looks divine! I love curry and was begging my mom to find her curry recipe we used to use when I was little, but she couldn't. Would this translate well to chicken curry? It seems like it would... We always used to put shredded coconut, raisins and chopped peanuts on ours :)

  6. Wow, you sure come up with some delicious recipes. I have one ?? about one that you had a while ago. Chocolate Fudge Cake- In theirections it says to _Pour into greased and floured bake pan and cover. Bake in covered slow cooker on high for 2 1/2 -- 3 1/2 hours to until toothpick inserted comes out clean-. Well I don't understand why another cake pan that's covered and bake in slow cooker....Am I just not getting it or what. I would love to try this but I'm confused....thank you,,,Kae

  7. To Barbara, I still make the curry you are referring to. You can find it in Joy of Cooking(White Cover, pg 211)under Rice Table or Rijsttafel. If you don't have a Joy cookbook check out the library.

  8. I made this today and while it as yummy, I felt like it was missing something? Maybe it was because I only used 1 TBSP of curry because I was afraid of how the kids would like it. It just didn't seem as Rich. Definitely a keeper and I'll tweak it a bit next time. Thank you!

  9. I made this for dinner tonight. I agree with Heidi that it was missing a little something (though I also used only about 1 TBS of curry because I wanted my kids to eat it). It wasn't quite "curry", but it was still really tasty and SUPER easy! The best part was that my kids LOVED it!
