Menu Plan Monday!

Hello everyone, here's what's on the menu for this week.

Monday 28th
Breakfast: Crepes, Orange Juice
Lunch: Pigs in a blanket
Dinner: Impossibly Easy Taco Pie


Tuesday 29th
Breakfast: Scrambled eggs, Toast, Milk
Lunch: Grilled Cheese and Ham, Mixed veggies
Dinner: Fish Sticks, Potato Salad (Kids Pick)

Wednesday 30th
Breakfast: Old fashioned doughnuts, Juice
Lunch: Ravioli, Fruit
Dinner: Green-Chili Chicken Casserole

Thursday 31st
Breakfast: Cereal w/milk, Apple Juice
Lunch: Cheese Quesadillas, Fruit smoothies
Dinner: Meatballs and Spaghetti w/ Garlic Bread


Friday 1st
Breakfast: Bacon, Eggs, Toast
Lunch: Mini Egg Rolls, Salad
Dinner: Chicken Alfredo Pizza

Saturday 2nd
Breakfast: Pumpkin Pancakes, Juice
Lunch: Chili Dogs
Dinner: Asian Beef Wraps and Salad


Sunday 27th
Breakfast: Bacon, Sausage, Biscuits and Gravy
Lunch: Late breakfast so no need for lunch
Dinner: Portuguese Chicken and Rice
Dessert: Coconut Pastries

Scalloped Potatoes!

This is one of the family's favorite side dishes, the kids love it, hubby loves and I adore it because I'm a huge potato fan...what can I say, give me fries, mashed potatoes, scalloped potatoes, baked potatoes or whatever potatoes and I'm happy.

Super easy to make and so good!



Scalloped Potatoes

4 medium potatoes, peeled and thinly sliced
1 small onion, thinly sliced
Salt and pepper to taste
1 1/2 cups heavy cream
Parmesan cheese

Grease a 13 x 9" baking dish. Add a layer of potatoes, salt and pepper to taste and one layer of onions. Repeat with remaining potatoes and onions.



For the last layer, I add a sprinkle of parmesan cheese


and then pour the heavy cream over.


Bake at 375 degrees for 35-40 minutes or until potatoes are tender and bubbly.

Old Fashioned Fried Chicken!

I LOVE fried chicken and there's so many versions out there, but this is the way I make mine, I found the recipe in one of the Gooseberry Patch cookbooks a long time ago and the family really enjoyed it.



OLD FASHIONED FRIED CHICKEN!!

1 gal. cold water
1 c. kosher salt
1 c. sugar
4 to 5lbs chicken
1 c. all purpose flour
3/4 c. buttermilk
1/2 t. cayenne pepper
oil for deep frying

Combine water, salt and sugar in a large bowl; add chicken. Cover and refrigerate overnight; drain and pat dry.

Combine flour, buttermilk and pepper in a mixing bowl. Coat each piece of chicken; deep fry in oil at 355 degrees for 8 minutes or until juices run clear. Makes 4 to 6 servings.

Crockpot Beer and Salsa Ribs!

I had a rack of ribs to cook today and I wanted to throw them in the slow cooker but I wanted something different. Being the adventurous person that I am, I never think twice about throwing in a few ingredients and seeing what comes out.

This was a huge hit, everyone raved about it and had seconds.


Crockpot Beer and Salsa Ribs


1 rack pork ribs

1 jar medium salsa

1 (12 oz) bottle of beer - I used Heineken but use whatever you have on hand

1 envelope Onion Gravy

1 medium onion sliced


Cut the pork rack into smaller pieces, put in the crockpot and throw in all the other ingredients, give it a good stir and cook on LOW for 8 hours.

It's SO good, it literally falls off the bone and you get left with this amazing rich brown gravy too.

Dinner: Green-Chili Chicken Casserole

Lunch: Cheese Hotdogs
Dinner: Chicken in Cream Sauce w/ Garlic Mashed Potatoes


Sunday 27th
Breakfast: Bacon, Sausage, Biscuits and Gravy
Lunch: Quesadillas
Dinner: Slow Cooked SzechuanRibs, fries
Dessert: Coconut Pastries

Lemon Bread Pudding!

YUM!

I love anything lemon and I love bread pudding so this is the perfect combination...just goeey mushy lemony bread.


LEMON BREAD PUDDING

6 eggs
1/2 cup sugar
1/2 teaspoon vanilla
1/2 cup bisquick
2 cups milk
10 slices french bread, cut into cubes
1 can (15 oz) lemon pie filling
1 cup frozen whipped topping


In a bowl mix the eggs, sugar and vanilla extract.


Add the bisquick and the milk and mix well with a wire whisk


Cut the french bread slices into cubes


Throw the bread cubes into the egg mixture and stir it well to coat.


Layer half of the bread mixture in the bottom of a greased casserole dish.


Spread about 1 cup of the pie filling, randomly over the bread mixture


Yum!

Layer the remaining bread mixture over the pie filling. See how easy this is? There's nothing to it.


Bake in a 350 degree oven for 45 to 50 minutes or until golden brown. It smells SO good while it's baking.


In the meantime take the remaining pie filling and the cup of whipped topping and mix both well.


Then you dish up some warm bread pudding into a bowl and scoop a big ol' spoon of the whipped lemon topping. Enjoy!

Hello everyone, so I'm sitting here trying to figure out exactly what I'm doing with the menus because for once in my life, I'm late planning it for this week and I have to get groceries tomorrow. *sigh*

So here goes nothing, I'm planning as I type!
