Busy Weekday Chicken!

We all have those days where we are so busy that by dinner time we realize we need to get something on the table ASAP. This is a portuguese chicken dish that I often turn to when I have about 20 minutes to get dinner fixed. 

It's supposed to be made with Chourico, but if you don't have any on hand you can substitute with smoked sausage or even hotdogs.

Chicken with Chickpeas and Chourico
(Franco com Grao e Chourico)

1 whole chicken, cut into pieces (or you can use some chicken breasts cut into bite size chunks) 
1 medium onion, sliced olive oil garlic carrot, thinly sliced (the amount depends on how much you want) 
1 can of garbanzo beans (chick peas) 
1 chourico, sliced (substitute with hotdog or smoked sausage) 
1 small can of tomato sauce 
salt and pepper to taste 

In a large skillet, add a little bit of olive oil, the garlic and the onions. Cook for a minute or so until the onion starts getting tender.

 Add the chicken, carrots, chourico and chickpeas. Stir and cook for a minute or two, then add the tomato sauce and about 1/2 cup of water. (you may need to add a little bit more as it cooks so you can have a nice gravy)

Turn the heat down to medium and cover.....cook for about 20 minutes or until chicken is done and the carrots are cooked.

Serve with mashed potatoes or rice.
