I haven't made them in years, but got a craving for coconut and just had to have them today. Just wait until you see how easy they are to make and just how delicious they are.
Coconut Pastries
1 package Puff Pastry
3 eggs
1 cup of milk
1 cup of sugar
1 cup of coconut
sprinkle of vanilla essence
Powdered sugar for garnish
Unroll the sheets of puff pastry and cut each one into 9 squares.
Place on a cookie sheet bake in a 400º oven until done. Remove from oven and cool down completely.
In the meantime, in a pan, add the eggs, milk, sugar, coconut and a drop or two of vanilla essence.
Cook over medium heat until it thickens, remove from heat and allow to cool down.
Open each pastry square and add a tablespoon of the filling or a little more. Sometimes I overdo it just because I love it so much LOL
Cover back up and sprinkle with powdered sugar. YUM!

ReplyDeleteI went to the store to buy puff pastry - and was instructed to get phyllo dough - UGH - doesn't seem like what I need and in the oven it only browned.
Can I use crescent roll dough?

ReplyDeleteI am not very bright coming on here to browse getting so close to dinner time!!! Everything is making me drool! I used to eat something like this as a child only instead of coconut it was a cream cheesey flavor...have no clue what they are called. These look so good I will have to give them a whirl along with a bunch of other stuff real soon. =)

I made these today. They are soooo good. Too dangerous for me to have at home. I wanted to eat the entire thing. I'll have to make this for my next dinner party. Everyone will love it! Thank you so much for sharing such a great recipe!
