Some are under the impression that I never make mistakes in the kitchen, but the truth is that sometimes I botch things up, yep....like today when I started making the cake and was under the impression that I greased the pan enough, only to have it completely break on me and the bottom layer stay stuck to the pan......no biggie, we just turn the cake into a trifle, right?

Lemon Cake
1 cup of sugar
1 stick of butter
2 eggs
1/2 cup of milk
1 teaspoon baking powder
1 1/2 cups flour
Grated rind of two lemons
In a large bowl, cream butter and sugar.

Add eggs and milk and mix well. Add in the flour and baking powder and stir until well incorporated.


Lastly add in the grated lemon rind, mix well and pour into the WELL greased cake pan.



Bake at 350º for about 50 minutes or until a toothpick inserted in the middle comes out clean.

Then you realize your cake stuck to the pan but you don't want to throw it out.....let's make a quick trifle, all you need is the cake and some whipped topping.
Break the cake into big chunks and cover the bottom of a deep dish pie pan....spread a layer of whipped topping and smooth it out.


Add another layer of cake and finish with another layer of whipped topping. Sprinkle some grated lemon rind on top and pop it into the refrigerator for a while.

I have to say that the best part of cooking is watching the kids enjoying it and this photo captures it all for me. Yep, I think we salvaged what could have been a lemon cake disaster. :)
