White Rice with Peas!

Nicholas LOVES rice, this child would live on rice alone if he could. But I get tired of the plain white butter rice, so sometimes I make this variation which gives it that extra little kick and he just loves it even more....besides, there's peas in there so I'm getting some veggies in too right?

White Rice with Peas

olive oil
1 small onion, finely diced
2 garlic cloves, finely chopped
1 cup of frozen peas
salt and pepper to taste
1 1/2 cups of rice
3 cups of boiling water


In a pot, add the olive oil, onion, garlic, pease and salt and pepper. Cook over medium heat for about 2 minutes, don't let the garlic brown.

Add the rice and the 3 cups of boiling water.

Stir well to combine, place the lid on and turn the heat to low. Cook until the rice is tender. Check on it after about 10 minutes to make sure it's not sticking, if it is and the rice is not yet cooked, add a little bit of water.

Fluff with a fork and serve with steaks, chicken or fish.

That looks like a fun twist for plain white rice that my family will get to try soon. Thanks for the pictures / how-to. That always helps!
